Grilled Eggplant Recipes

Are you looking for something different to cook on the grill? How about some eggplant? Eggplant on the grill is quite tasty. Add ricotta salata or parmesan cheese and you have got yourself two different incredible dishes.

Grilled Eggplant Ricotta Salata

What you will need:

2 tablespoons extra virgin olive oil 2 teaspoons fresh oregano leaves 2 (1 1/2 pounds each) eggplants, cut lengthwise into 1/2-inch- thick slices Nonstick cooking spray 1/2 teaspoon salt 1/4 teaspoon ground pepper 1/4 cup ricotta salata or feta cheese, crumbled 2 plum tomatoes, cut into 1/2-inch dice Lemon wedges Option: oregano sprigs, to add as a garnish

To Prepare Eggplant on the Grill:

Start your charcoal fire or preheat gas grill for covered direct grilling over medium-high heat.

While you wait for the grill to reach the desired temperature, in small saucepan heat oil over medium heat until hot but not smoking. Remove the saucepan from heat. Next add 2 teaspoons oregano. Let the oregano soak into the liquid until the liquid until ready to serve.

Now you want to lightly spray both sides of eggplant slices with the nonstick spray. Sprinkle eggplant with salt and pepper. Set the eggplant on hot grill rack. Cover your grill and cook eggplant 7 to 10 minutes or until tender and browned. Turn over once. Move the eggplant to a platter; drizzle with oregano oil and top with ricotta salata and tomatoes. Serve with lemon wedges. Option: garnish with oregano sprigs.

Another wonderful eggplant recipe on the grill is grilled eggplant parmesan.

You will need: 1 medium (about 1 1/2 pounds) eggplant, cut lengthwise into 4 slices 1 tablespoon olive oil 1 teaspoon olive oil 1/2 teaspoon salt 1/4 teaspoon coarsely ground black pepper 4 ounces mozzarella cheese, shredded 1/4 cup grated Parmesan cheese 1/2 cup (loosely packed) fresh basil leaves, sliced 2 medium ripe tomatoes, each cut into 4 slices

To Prepare Eggplant on the Grill:

Start the grill and let the temperature reach medium heat. While grill is heating up you want to lightly brush the eggplant slices with oil. Next sprinkle with salt and pepper. In small bowl, mix mozzarella cheese, Parmesan cheese, and basil and set this off to the side. Put the eggplant slices on the grill over medium heat. Cook eggplant for 8 to 10 minutes as you want to cook until they are tender and lightly browned. Turn once. Top eggplant slices with tomato slices and cheese mixture. Cover grill and cook 1 to 2 minutes which give the tomato slices time to warm up and the cheese to melt.
