Easy Eggplant Parmesan
This is a delicious, simplified version of the classic Italian dish featuring breaded eggplant in tomato sauce. Eggplant slices are dipped in flour and egg before being dredged in a breading mixture featuring Italian seasoned bread crumbs, fresh parsley, dried oregano, fresh grated Parmesan cheese, coarse-grained salt and milled black peppercorns. The thick eggplant slices are topped with Mozzarella cheese and baked golden brown.
Eggplant has a rich texture when baked, and is wonderful in tomato sauce based dishes. The thick slices hold up well during oven roasting, and eggplant loves to absorb other flavors. This recipe lets you choose your favorite store bought spaghetti sauce as a time saver. Store bought sauces do save time and can save money. While a homemade spaghetti sauce makes the dish more traditional, the store bought spaghetti sauce can still bring rich flavor. If possible get good, fresh mozzarella, and a nice new chunk of Parmesan Cheese. Using fresh cheese makes a huge difference in flavor.
