Easy Eggplant Parmesan

This is a delicious, simplified version of the classic Italian dish featuring breaded eggplant in tomato sauce. Eggplant slices are dipped in flour and egg before being dredged in a breading mixture featuring Italian seasoned bread crumbs, fresh parsley, dried oregano, fresh grated Parmesan cheese, coarse-grained salt and milled black peppercorns. The thick eggplant slices are topped with Mozzarella cheese and baked golden brown.

Eggplant has a rich texture when baked, and is wonderful in tomato sauce based dishes. The thick slices hold up well during oven roasting, and eggplant loves to absorb other flavors. Easy Eggplant Parmesan

Ingredients:

3 - 4 large American Purple Eggplants sliced into 3/4 to 1-inch slices 1 cup All-Purpose Flour 4 Large Eggs, beaten 1-1/2 cups Italian Seasoned Breadcrumbs 1/2 cup Fresh Parsley, minced 1 teaspoon Ground Oregano 1 cup grated Fresh Parmesan Cheese Coarse-Grained Salt Fresh Ground Black Pepper, to taste 1 (32 ounces) jar Spaghetti Sauce 2 cups shredded Fresh Mozzarella Cheese 4 cups cooked Pasta Noodles

Preparation:

1. Preheat the oven to 350 F. 2. Place the all-purpose flour in shallow bowl. Place the beaten eggs in separate shallow bowl. 3. In large bowl, combine the seasoned bread crumbs, fresh parsley, ground oregano, Parmesan cheese, salt and pepper. 4. Dredge the eggplant slices through flour, then through egg, then through bread crumb mixture. 5. Spray 9-inch x 13-inch baking dish with nonstick cooking spray. 6. Place the eggplant slices in baking dish. 7. Bake for 30 minutes. 8. Remove from the oven. Spoon the spaghetti sauce over eggplant. 9. Sprinkle fresh mozzarella over spaghetti sauce. 10. Return to the oven and bake for an additional 10-15 minutes. 11. Serve eggplant Parmesan over hot pasta.
