Eggplant and Roasted Bell Pepper Frittata

This is an incredible Italian omelette that is perfect for breakfast, brunch, lunch or dinner. Serve as a warm or hot entrée or cool completely and serve as a side dish or hearty snack.

Eggs, milk, coarse salt, and fresh ground black pepper are combined in a large mixing bowl, and whisked until well blended. The eggplant cubes are pan seared until tender and lightly golden brown. Roasted red peppers and extra virgin olive oil are stirred into the eggplant, and the mixture is simmered until the vegetables are heated through. The beaten eggs are poured over the vegetables and cooked until the eggs are set. The frittata is placed under a preheated broiler for an additional minute or two to brown the top and edges.

Cooks Notes: To remove excess liquid from the eggplant, slice the eggplant crosswise into ovals, lightly salt and place the slices into a colander for about 30 minutes and allow the eggplant to drain. Toss the eggplant gently every 10 minutes. Some evaporation will also occur on the surfaces of the eggplant. The draining process takes some of the bitterness out of the eggplant.

Lift the eggs along the sides of the skillet with a spatula, gently to allow uncooked eggs to move to the bottom of the pan.

Recipe requires the use an ovenproof skillet.

Eggplant and Roasted Bell Pepper Frittata

10 Large Eggs 1/2 cup Whole Milk 1/2 teaspoon Coarse Salt 1/4 teaspoon Fresh Ground Black Pepper 3 tablespoons Extra Virgin Olive Oil, divided 2 cups Finely Chopped Peeled Eggplant 1 (12 ounces) jar Roasted Red Bell Peppers, drained, chopped 1/4 cup Fresh Grated Parmesan Cheese

1. Add eggs, milk, salt and pepper to mixing bowl. Whisk vigorously to combine.

2. Add 2-tablespoons extra virgin olive oil to oven proof skillet. Heat over medium heat until oil is hot, but not smoking.

3. Add eggplant to skillet and stirring occasionally, pan-sear 6-7 minutes.

4. Stir in roasted red bell peppers, and remaining olive oil.

5. Simmer 2 minutes, stirring frequently.

6. Pour egg and milk mixture over vegetables.

7. Reduce heat to low.

8. Cover skillet and cook 15 minutes, or until eggs are almost set.

9. Preheat broiler.

10. Sprinkle grated fresh Parmesan over eggs. Place uncovered skillet under hot broiler for 2 minutes, or until edges are golden brown and eggs are completely set.
